Pistachio cultivation requires extensive water resources. It takes about 10,000 liters (2,600 gallons) of water to produce just one kilogram of pistachios. This need for irrigation can lead to serious water shortages in arid regions.

In Spain, pistachio farming has expanded fivefold since 2017, replacing traditional crops like olives. While pistachios adapt well to climate change, the trees still need a cold period to produce fruit — a challenge as winters warm.

Matcha Tea’s Ascendancy

Another rapidly growing trend is matcha tea. The demand for this green powder, rich in antioxidants, has skyrocketed globally. Between January and August 2024, Germany imported over 240 tons, a 240% increase compared to the previous year.

Japanese producers, who specialize in high-quality matcha, are facing shortages due to this surge. Prices for matcha have nearly tripled, significantly impacting traditional tea ceremonies and domestic consumers in Japan.

The Quinoa Phenomenon

Quinoa’s rise as a superfood, declared the International Year of Quinoa by the UN in 2013, has also had negative consequences. In Peru and Bolivia, local populations struggle to afford quinoa, which was once a staple food.

Farmers have begun cultivating quinoa on unsuitable land, leading to environmental degradation. Traditional practices that allowed soil recovery over several years are no longer feasible, resulting in increased reliance on chemical fertilizers and pesticides.

Long-Term Impacts and Solutions

The rapid changes in food preferences highlight the complex relationship between consumer trends and sustainability. Fair trade organizations advocate for diversified agricultural practices to ensure resilience against market fluctuations.
