Several owners cite the soaring prices of grocery items and the difficulties of maintaining profitability in the restaurant industry as key reasons for the increased costs. As Mélanie Charbonneau, co-owner of Érablière Charbonneau, stated, their profit margins are modest, generally between 5% and 10%:

Maxime Constantin, who manages Cabane à sucre Constantin, emphasized that the rise in expenses impacts their prices. “We produce everything from scratch, which adds to the overall cost,” he explained.
